This recipe is for Himachali style besan (gram flour) curry. I call is khatti-meethi curry too. Take one bowl of curd and keep it without freezing so that it becomes bit sour. it may take few hours to turn sour in summer season and in winters it may takes days. So plan accordingly.


Now curd is ready. Mix some water to make it thin and make thick lassi of it. Take another bowl and take 2-3 table spoon of gram flour. Mix small amount of water in it. Make its semi liquid paste and then mix this paste in prepared lassi.


Now take fine chopped onion, little bit garlic (2-3 cloves) and little bit ginger. Heat the pan and add mustard oil to it. Then add garlic and methi seeds same time, immediately after this add chopped onion. Then add 15-20 curry leaves. Then add other Masalas like coriander power, cumin seeds, turmeric and powder of one cardamom. After cooking the masala for one minute add prepared mixture of lassi with gram flour.


Keep moving the curry until it starts boiling. Now boil it on medium sim for 10-15 minutes and then add little bit of sugar.

At last add coriander leaves to garnish it and serve hot with rice.
